THE RESTAURANT
The Tokyo branch of Vegan Ramen UZU brings Kyoto’s pioneering vegan ramen to the immersive art world of Toyosu. At its heart is the Miso Ramen Vegan UZU style, featuring a rich broth made from Rausu kelp, Japanese shiitake, oat milk, blended miso, and white sesame paste, with aromatic notes of ginger and garlic. Toppings include roasted tomatoes, crispy maitake mushrooms, and a refreshing hint of yuzu peel. The house-made medium-thick noodles are crafted from Hokkaido wheat mixed with pesticide-free whole-grain flour from Aya Town in Miyazaki—chewy, smooth, and utterly satisfying.
Beyond ramen, the café offers vegan ice cream, muffins, and a variety of teas. Flavors like vanilla (¥900), matcha coconut, chocolate, yuzu, chocolate banana, and seasonal strawberry (around ¥800 each), plus muffins in pecan banana, cherry, and chocolate (¥900) and teas (¥550–800), add delightful choices after your meal.
