Established in June 2024, it operates Tuesday to Friday from 11:00 AM to 2:30 PM, offering only a 10-piece sushi set with miso soup—by reservation only. The space converts into a bar in the evening, and the restaurant observes closures on Saturday, Sunday, and Monday.

Created with the vision of bringing plant-based sushi to Tokyo, it enlists expertise from chef Akira Tanimizu to craft imaginative pieces using Japanese-inspired vegan ingredients (king oyster mushroom, pumpkin, myoga, tofu kabayaki) that faithfully recreate traditional sushi textures and taste.
DINING & RECOMMENDATIONS
The sushi set is visually striking and satisfying in every bite—favorites include tempura, scrambled egg, vegan tuna mayo, and salmon roe-style pieces. While the scrambled egg divided opinions, many praised its creativity. The reservation system ensures smooth service. The ambiance is calming, with subtle music and warm, attentive service.
